I particularly love this tomato pesto orzo recipe because of the super-packed nutrition in so few ingredients. Tomatoes are packed with both lycopene and a strong vitamin C antioxidant. Pesto includes basil, garlic and healthy olive oil fats – all mixed in with a fiber-packed whole grain. For quick and cheap, this is hard to beat.

Tomato Pesto Orzo Recipe

Grocery List for 6 Servings:

Grocery List

  • Orzo Rice (whole-grain) (16 oz.) – $4
  • Tomato Paste (2)¬†– $2
  • Pesto¬†(6 oz.)- $7

Seasonings List:

  • Minced Garlic – 3 Tbsp
  1. Cook the pasta thoroughly as directed, drain and set aside when done (do not add oil to boiling pasta).
  2. Mix in 1.5-2 cans of tomato paste depending on how much tomato taste you would like in the pasta.
  3. Mix in pesto.
  4. Add 2 Tbsp minced garlic.
