We have all had those nights where we have to throw something together in a crunch. There are those days where the pantry and the refrigerator are completely empty, it’s late, and a hungry family is staring at you as you decide between take out or a quick meal. Well, you can save yourself some money and (potentially) time with this quick Tomato Pesto Orzo Recipe!
I particularly love this tomato pesto orzo recipe because of the super-packed nutrition in so few ingredients. Tomatoes are packed with both lycopene and a strong vitamin C antioxidant. Pesto includes basil, garlic and healthy olive oil fats – all mixed in with a fiber-packed whole grain. For quick and cheap, this is hard to beat.
